I eat gluten-free. So, I would say that my staple foods are whole and preferably organic. Fresh fruits and vegetables.
I eat our fresh, organic and extremely local eggs from the back yard flock. We are raising 5 more chicks at the moment. I buy organic chicken from Whole Foods every week and sometimes organic pork.
I stock the pantry with dried beans and whole grains such as quinoa, gluten-free oats and various rices. We also have a "snack drawer" of nuts, corn chips, gluten-free pretzels and dried fruits.
I also couldn't live without my spices. I like to have a good sea salt on hand. My favorite spice blend of all time is herbs de provence. I have also discovered a nice salt/spice blend that I have been using a lot lately. Our garden is stocked with fresh herbs as well; rosemary, thyme, basil, parsley, oregano, chives and sage.
We use canned tomatoes, chicken and olives. Oh, speaking of olives, we always have on hand a nice bottle of olive oil. I also couldn't live without my Pamela's gluten-free baking mix and my chocolate.
It all sounds a bit idyllic. I can't say it is all the time. I do eat at restaurants sometimes. I do feed my family frozen tamales and pizza (they can eat gluten). But for the most part, eating gluten-free has forced me to eat healthier and more simply. I am grateful for that.

We're not gluten free, but our pantries look and sound very similar...especially the eggs (but you knew that ;-)
We just brought in our first snips of fresh basil tonight...Heavenly aroma isn't it?!?
