I feel a tug toward warm food this time of year. One week, I'll plan for a soup or something baked. Then slowly, over the next month or two, I'll be making soups or bakes every day of the week. It's a slow and natural shift. I love that this time of year when I crave the heartier meals.
One of my favorite mac and cheese recipes is this. Tweaking a recipe has never been a comfortable thing for me. But, I want to please my family and I want to make food that my kids are in love with (most days!). In order to be a better home chef, I need to step outside my comfort zone just a wee bit and experiment. We had lots of apples around and I thought I could top the bake with them instead of the usual tomatoes and bread crumbs. It turned out really good. Well, actually, I topped the bake with 2/3 apples and 1/3 tomatoes just to be safe.
I've also found that two pounds of pasta will make the recipe balanced and I added most of the the cheese directly to the bechamel sauce instead of topping the noodles with cheese.
This winter I plan on adding more vegetarian soups to my winter repertoire.
Yum - the apples sound nice.
I love soup - I could eat soup every meal.

Oh I am feeling the shift too although the weather is supposed to back to near 90 degrees this week. Ugh. I just got a Moosewood cookbook from the library and all the soups looks delicious. I will be making more soups this year too.

We have a couple of Moosewood cookbooks that we've had for a long time. I need to look at them again. Wow, you've had a really hot summer. Maybe your winter will be mild?
