I was seriously surprised at how large they got! I've been scrubbing, cutting and juicing for days! :)

I agree! You never know what you're going to get until you pull them out of the ground!

I juiced some the other day and I still think I have at least 20 lbs. I should put it on the scale!

Lots and lots of veggies. We had veggie chili the other night with lots of tomatoes and carrots and corn. Last night Jonathan made a stir fry with kohlrabi, tomatoes, broccoli and corn from the garden. This morning I'm making some carrot juice. I think I'm going to turn orange! :)

Talk about a bountiful harvest! I think that you should put carrot cake and carrot muffins and carrot soup on the menu! Gorgeous color!

Yeah, I've never ever had quite a harvest of carrots like this one. Next on my list of things to do is grating up a whole bunch, steaming and freezing them for carrot muffins! But, the last few mornings, I've been enjoying juiced carrots with a bit of ginger. The carrots will be gone before I know it. It just goes to show me how little food I actually produce in my garden.
